  • 500 ml Whole Milk (or almond/soy milk)
  • 1 whole Vanilla Pod (or vanilla extract)
  • 4 large Egg Yolks (or cornstarch for egg-free custard)
  • 30 g Cornstarch
  • 100 g Mini Chocolate Chips

Instructions

  1. In a mixing bowl, combine flour, sugar, and salt.
  2. In another bowl, dissolve fresh yeast in warm milk until frothy.
  3. Mix eggs and melted butter into the flour mixture, then gradually add the yeast mixture while stirring until combined. Knead until smooth.
  4. Let the dough rise in a greased bowl covered with a cloth for about 1 hour or until doubled in size.
  5. For the custard filling, whisk milk, sugar, egg yolks, and cornstarch together; cook over medium heat until thickened. Stir in vanilla after removing from heat.
  6. Roll out the risen dough on a floured surface, cut into pieces, fill with custard, fold over and seal.
  7. Preheat oven to 180°C (350°F) and bake brioches for about 12 minutes or until golden brown.
