  • 18 oz all-purpose flour (just over 4 cups)
  • ¼ cup + 1 Tbsp granulated sugar
  • 2½ tsp fine sea salt
  • 1 Tbsp + 1/2 tsp instant yeast
  • ½ cup + 2 Tbsp cold water
  • ½ cup + 2 Tbsp cold whole milk
  • 3 Tbsp unsalted butter, softened (European-style)
  • 1¼ cups cold unsalted butter (for lamination)
  • 1 large egg (for egg wash)
  • 1 egg yolk (for egg wash)
  • Pinch of salt (for egg wash)

Instructions

  1. In a mixing bowl, combine flour, sugar, salt, and yeast. In another bowl, mix cold water and milk; add to dry ingredients. Combine until mixed and knead in softened butter until smooth.
  2. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
  3. Prepare the butter block by placing cold unsalted butter between parchment paper and rolling it into a flat rectangle; refrigerate until firm.
  4. Roll out the chilled dough into a rectangle and place the butter block in the center; fold over the dough to encase the butter.
  5. Roll out again into a long rectangle and fold into thirds. Repeat this process three times, chilling as needed.
  6. Roll out the final time and cut triangles; roll each triangle from the wide end towards the tip.
  7. Place on baking sheets lined with parchment paper to proof for about an hour until doubled in size.
  8. Preheat oven to 400°F (200°C). Brush croissants with egg wash before baking for about 20 minutes until golden brown.
