Ingredients

For the Almond Filling
¾ cup unsalted butter
¾ cup granulated sugar
1½ cups almond meal (or almond flour/ground almonds)
2 large eggs
1½ teaspoons vanilla or almond extract

For the Croissant Base
6 large croissants (stale or day-old preferred)
8 tablespoons sliced almonds

For the Custard Mixture
1 cup milk
3 large eggs
¼ cup sugar
1 teaspoon salt

Instructions

  • Preheat the oven to 350°F (175°C). Grease a baking dish.
  • In a medium bowl, beat together the butter and sugar until creamy. Mix in the almond meal, eggs, and vanilla or almond extract until smooth to create the almond filling.
  • Slice each croissant horizontally, being careful not to cut all the way through. Spread the almond filling evenly inside each croissant.
  • Arrange the stuffed croissants in the prepared baking dish. Sprinkle sliced almonds over the top.
  • In a separate bowl, whisk together the milk, eggs, sugar, and salt to create the custard mixture. Pour the custard evenly over the croissants, pressing lightly so it soaks in.
  • Bake for 25–30 minutes, until the custard is set, croissants are golden, and the almonds are lightly toasted.
  • Serve warm, optionally with maple syrup or powdered sugar.
