Ingredients

Scale

For the Cheese Mixture:
32 oz ricotta cheese
2 large eggs
1 teaspoon salt
1 teaspoon dried basil
1/4 teaspoon black pepper
1/4 cup grated Parmesan cheese (plus extra for topping)

For the Pasta and Sauce:
48 oz marinara sauce (2 jars)
12 oz gluten-free penne

For the Topping:
16 oz shredded mozzarella cheese

Instructions

  • In a large bowl, combine the ricotta, eggs, salt, basil, pepper, and Parmesan cheese. Mix until smooth.
  • Lightly grease the crock pot insert and spread a thin layer of marinara sauce on the bottom.
  • Add a layer of uncooked penne pasta over the sauce.
  • Spoon part of the ricotta mixture over the pasta, followed by a layer of marinara sauce.
  • Repeat the layers (pasta, ricotta mixture, sauce) until all ingredients are used, ending with a layer of sauce on top.
  • Cover and cook on low for 3–4 hours or on high for 2–3 hours, until the pasta is tender.
  • About 20 minutes before serving, sprinkle the shredded mozzarella cheese over the top. Cover and allow it to melt completely.
  • Let the dish rest for a few minutes before serving. Garnish with extra Parmesan if desired.
