  • 2 (14 ounce) cans white beans (drained)
  • 2 (4 ounce) cans mild green chilies (with juices)
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon dried oregano
  • 4 ounces cream cheese (softened)
  • Salt & pepper (to taste)

Instructions

  1. In a large pot over medium heat, add olive oil. Sauté chopped onion for 5-7 minutes until translucent.
  2. Add bite-size chicken pieces and cook until no longer pink.
  3. Stir in minced garlic and cook for about 30 seconds until fragrant.
  4. Add chicken broth, white beans, green chilies, chili powder, cumin, and oregano; bring to a boil.
  5. Reduce heat and simmer for 10 minutes.
  6. Cut cream cheese into cubes; microwave for 30 seconds to soften. Stir into the chili and cook for an additional 5 minutes.
