  • 1 cup uncooked orzo pasta

  • 1/3 cup fresh squeezed lemon juice
  • 1/3 cup white apple vinegar
  • 4 garlic cloves, grated
  • 1 shallot, finely diced
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1 teaspoon lemon zest
  • Salt and black pepper to taste
  • 3 oz jar of capers, drained
  • 1 tablespoon olive oil

Instructions

  1. Prepare the fried capers: Heat olive oil in a small pan over medium heat. Add drained capers and fry for about 5 minutes until crispy. Drain on paper towels.
  2. Cook aromatics: In a Dutch oven, melt butter and sauté shallots for 2-3 minutes until softened. Add garlic and cook for another minute, then stir in flour.
  3. Simmer broth base: Add chicken broth and white apple vinegar; season with salt and pepper. Bring to a boil, then reduce heat and simmer for 15 minutes after adding cream and Parmesan cheese.
  4. Add orzo and chicken: Stir in uncooked orzo, shredded chicken, lemon juice, and zest. Cook uncovered for another 10 minutes while stirring frequently.
  5. Serve: Ladle into bowls and garnish with fried capers, additional Parmesan cheese, and lemon wedges.
