  • 1 can corn (drained)
  • 1 can diced tomatoes with green chilies (undrained)
  • 1 can black beans (drained and rinsed)
  • 5 cups chicken broth
  • 2 boneless skinless chicken breasts
  • 1 teaspoon cumin
  • 1 oz. packet taco seasoning
  • 1½ cups cheddar cheese (shredded)
  • ⅓ cup cream cheese (softened)

Instructions

  1. In a large pot, melt butter over medium heat. Sauté onions and jalapeno for about 5-6 minutes until softened, then add garlic and cook for another minute.
  2. Add tomato paste, corn, diced tomatoes, black beans, chicken broth, and taco seasoning to the pot. Stir to combine.
  3. Bring to a gentle simmer while partially covered for about 20-25 minutes.
  4. Remove cooked chicken from the pot; shred using two forks and return to the soup.
  5. Lower heat; gradually stir in cheddar cheese and cream cheese until melted and smooth.
  6. Adjust seasonings as needed before serving hot with desired toppings.
