  • 1 cup cherry tomatoes
  • 1/2 red bell pepper
  • 1/2 yellow onion
  • 4 cups fresh baby spinach
  • 1 Tbsp olive oil
  • 8 oz fresh chicken sausage
  • 2 cloves garlic (minced)
  • 1/2 cup half & half
  • 1/3 cup finely grated Parmesan cheese
  • 1½ cups medium shell pasta

Instructions

  1. Quarter the cherry tomatoes and finely chop the red bell pepper and yellow onion.
  2. In a large skillet, heat olive oil over medium heat. Add tomatoes, bell pepper, onion, salt, and crushed red pepper; sauté for about 7-8 minutes until softened.
  3. Cook medium shells in boiling salted water until al dente. Start cooking the chicken sausage when you add the pasta.
  4. Add chicken sausage and minced garlic to the skillet; cook for 5-6 minutes while breaking up the sausage.
  5. Stir in sugar and half & half until mostly absorbed, then incorporate spinach until wilted.
  6. Transfer cooked pasta into the skillet using a slotted spoon and mix well with sauce.
  7. Add Parmesan cheese and adjust creaminess with reserved pasta water as needed.
  8. Finish with freshly squeezed lemon juice just before serving.
