  • 3 large carrots
  • 3 stalks celery
  • 4 cloves garlic
  • 6 cups chicken broth
  • 1 cup half-and-half
  • 1 cup long-grain white rice
  • Fresh thyme and rosemary
  • 1 tsp kosher salt
  • 1 tsp Italian seasoning
  • ¼ tsp mustard powder
  • ¼ tsp paprika
  • ¼ tsp chili flakes
  • 3 Tbsp unsalted butter
  • ¼ cup all-purpose flour
  • Salt and pepper to taste

Instructions

  1. In a bowl, combine diced chicken with salt, Italian seasoning, mustard powder, paprika, and chili flakes; set aside.
  2. Melt butter in a large pot over medium heat. Sauté diced onions, carrots, and celery for 5-7 minutes until softened; add minced garlic.
  3. Add seasoned chicken to the pot and cook until no longer pink. Stir in fresh thyme and rosemary.
  4. Sprinkle flour over chicken and vegetables; stir well.
  5. Gradually pour in chicken broth and half-and-half; add rice. Bring to a boil, then reduce heat to low and simmer for 15-20 minutes until rice is tender.
  6. Adjust seasoning if needed; serve warm garnished with Parmesan cheese and parsley.
