For the Soup Base:
1 tablespoon vegetable oil
2 rings (about 26 oz total) beef sausage, sliced into 1/4-inch pieces
3 tablespoons unsalted butter
1 large yellow onion, chopped
2 medium carrots, diced
2 teaspoons garlic, minced
1/2 teaspoon salt
1/2 teaspoon black pepper
1/4 cup all-purpose flour

For the Broth:
3 cups chicken broth
1 cup whole milk

For Flavoring:
2 tablespoons Worcestershire sauce

For Garnish:
2 cans (15 oz each) Great Northern white beans, rinsed and drained
Fresh parsley, chopped

Instructions

  • Heat vegetable oil in a large pot over medium heat. Add the sliced sausage and cook until browned. Remove and set aside.
  • In the same pot, melt the butter. Add the onion and carrots, cooking for 4–5 minutes until softened.
  • Stir in the garlic, salt, and pepper, and cook for about 1 minute until fragrant.
  • Sprinkle in the flour and stir continuously for 1–2 minutes to form a roux.
  • Gradually pour in the chicken broth while whisking to prevent lumps.
  • Add the milk and Worcestershire sauce, stirring to combine. Bring to a gentle simmer.
  • Return the cooked sausage to the pot and add the white beans.
  • Let the soup simmer for 10–15 minutes until slightly thickened and heated through.
  • Taste and adjust seasoning if needed.
  • Serve hot, garnished with fresh parsley.
