1 lb ground beef
½ cup breadcrumbs
1 large egg
¼ cup milk
2 tbsp butter
1 medium onion, diced
2 carrots, peeled and diced
2 celery stalks, diced
3 tbsp all-purpose flour
4 cups beef broth
1 cup heavy cream
½ tsp nutmeg
½ tsp salt (or to taste)
½ tsp black pepper
2 cups egg noodles or diced potatoes
1 tbsp fresh parsley, chopped (optional)
Instructions
Prepare the Meatballs: In a large bowl, mix ground beef, breadcrumbs, egg, milk, onion powder, garlic powder, salt, and black pepper until combined. Roll into 1-inch meatballs.
Cook the Meatballs: Heat oil in a skillet over medium heat. Brown the meatballs for about 4 to 5 minutes until golden on all sides. Remove and set aside.
Prepare the Soup: In a large pot, melt butter over medium heat. Add diced onion, carrots, and celery; cook until softened (5-7 minutes). Stir in flour to create a roux.
Simmer the Soup: Gradually whisk in beef broth. Season with nutmeg, salt, and black pepper. Add browned meatballs and noodles/potatoes; simmer for 10-12 minutes until tender.
Finish the Soup: Stir in heavy cream; cook for an additional 2-3 minutes. Adjust seasoning if needed.
Serve: Ladle into bowls and garnish with fresh parsley if desired.
