Ingredients

Scale
  • 1 lb ground beef
  • ½ cup breadcrumbs
  • 1 large egg
  • ¼ cup milk
  • 2 tbsp butter
  • 1 medium onion, diced
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 3 tbsp all-purpose flour
  • 4 cups beef broth
  • 1 cup heavy cream
  • ½ tsp nutmeg
  • ½ tsp salt (or to taste)
  • ½ tsp black pepper
  • 2 cups egg noodles or diced potatoes
  • 1 tbsp fresh parsley, chopped (optional)

Instructions

  1. Prepare the Meatballs: In a large bowl, mix ground beef, breadcrumbs, egg, milk, onion powder, garlic powder, salt, and black pepper until combined. Roll into 1-inch meatballs.
  2. Cook the Meatballs: Heat oil in a skillet over medium heat. Brown the meatballs for about 4 to 5 minutes until golden on all sides. Remove and set aside.
  3. Prepare the Soup: In a large pot, melt butter over medium heat. Add diced onion, carrots, and celery; cook until softened (5-7 minutes). Stir in flour to create a roux.
  4. Simmer the Soup: Gradually whisk in beef broth. Season with nutmeg, salt, and black pepper. Add browned meatballs and noodles/potatoes; simmer for 10-12 minutes until tender.
  5. Finish the Soup: Stir in heavy cream; cook for an additional 2-3 minutes. Adjust seasoning if needed.
  6. Serve: Ladle into bowls and garnish with fresh parsley if desired.
