  • 1012 bone-in skinless chicken thighs
  • 3 quarts cold water
  • 1 tablespoon olive oil
  • 2 yellow onions (peeled and diced)
  • 8 large carrots (peeled and chopped)
  • 6 ribs celery (chopped)
  • 5 cloves garlic (minced)
  • 2 teaspoons salt
  • 1 teaspoon pepper
  • Juice from one lemon
  • 2 bay leaves
  • Fresh chopped parsley (for garnish)

Instructions

  1. In a large stockpot, combine chicken thighs and cold water. Bring to a boil, cover, reduce heat, and simmer for 30-45 minutes.
  2. While the broth simmers, heat olive oil in a Dutch oven over medium heat. Add onions; sauté until translucent (4-5 minutes). Stir in carrots and celery; cook for another 10-15 minutes. Add garlic, salt, pepper, and bay leaves in the last two minutes.
  3. Strain the broth into the pot with vegetables after removing cooked chicken. Shred the chicken once cool enough to handle.
  4. Return the pot to a boil; add lemon juice and shredded chicken back in. Cover and simmer for an additional 30 minutes.
  5. Adjust seasoning as needed and garnish with fresh parsley before serving.
