  • 8 oz egg noodles (or preferred pasta)
  • 4 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme (or 2 teaspoons fresh thyme)
  • 1 cup low-sodium chicken broth
  • ½ cup heavy cream
  • Salt and black pepper, to taste

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Season chicken breasts with salt, pepper, and thyme.
  2. Sear chicken for about 5-6 minutes per side until golden brown and cooked through. Remove from the pan and let rest before slicing.
  3. Boil salted water in a pot and cook the egg noodles according to package instructions until al dente. Reserve about ½ cup of pasta water before draining.
  4. In the same skillet, reduce heat to medium and melt butter while scraping up bits from the pan.
  5. Sauté minced garlic for about a minute until fragrant.
  6. Add chicken broth; bring to a simmer and cook for about 3-4 minutes until slightly reduced. Stir in heavy cream and simmer until thickened.
  7. Toss cooked noodles into the skillet to coat in the sauce; add reserved pasta water if needed.
  8. Incorporate sliced chicken back into the skillet and mix everything well.
  9. Adjust seasoning with salt and pepper if desired; serve hot with optional garnishes.
