  • 1 cup evaporated milk
  • 32 oz chicken stock
  • 4 cups shredded cooked chicken
  • Fresh thyme (optional)
  • 2 cups all-purpose flour
  • 1 tablespoon plus 1 teaspoon baking powder
  • 1 teaspoon freshly cracked black pepper
  • 1 teaspoon salt
  • 3/4 cup whole milk
  • 4 tablespoons butter (melted)

Instructions

  1. In a heavy-bottomed pot, melt butter over medium-high heat. Sauté onion, carrots, and celery for about 5 minutes until softened; add garlic and cook for another minute.
  2. Stir in flour to create a roux; cook for one minute. Gradually add evaporated milk and chicken stock while stirring to avoid lumps.
  3. If using raw chicken, add it now along with an extra cup of broth; simmer for 20 minutes until cooked through. Shred and return to soup.
  4. For pre-cooked chicken, bring the soup to a boil, add chicken with thyme, pepper, and salt; simmer uncovered while preparing dumplings.
  5. Combine dry dumpling ingredients in one bowl and wet ingredients in another; mix until just combined. Drop spoonfuls into simmering soup without lifting the lid; cook for about 15 minutes until fluffy.
