  • 1 cup finely grated carrots
  • 1 cup chopped pitted dates
  • ¼ cup coconut milk (or whole milk)
  • 1½ tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1 tsp ground cinnamon
  • ½ tsp ground ginger
  • ¼ tsp ground nutmeg

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a cake pan with grease and parchment paper.
  2. In a bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, ginger, and nutmeg.
  3. In another bowl, cream softened butter and brown sugar until fluffy. Beat in eggs one at a time followed by vanilla extract.
