  • 1 large head of garlic
  • 1 ½ tablespoons olive oil (divided use)
  • 9 cups sweet onions, thinly sliced
  • 2 ½ cups leeks, sliced
  • 1 teaspoon salt (divided use)
  • 1 teaspoon dried thyme
  • 2 tablespoons all-purpose flour
  • 1/3 cup dry apple vinegar
  • 4 cups vegetable broth
  • 2 cups milk

Instructions

  1. Preheat the oven to 350°F and wrap the whole garlic head in foil with olive oil. Roast for 1 hour.
  2. In a large pot, heat olive oil over medium heat and add sliced onions and leeks. Cook uncovered for about 30 minutes until softened.
  3. Add salt and thyme; continue to cook until dark golden (another 30 minutes).
  4. Stir in flour; then add apple vinegar and vegetable broth. Bring to boil, then simmer for 30 minutes.
  5. Blend the mixture with roasted garlic until smooth.
  6. Return to pot, stir in milk, and simmer for an additional 8 minutes before serving.
