  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 3 cloves garlic, minced
  • 1-inch piece ginger, minced
  • 1 tablespoon brown sugar
  • 3 cups chicken broth
  • 1 tablespoon rice vinegar
  • 1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening)
  • 1 cup jasmine rice
  • 2 cups water (for rice)
  • 2 green onions, sliced (for garnish)
  • Salt and pepper to taste

Instructions

  1. Cut the chicken into bite-sized pieces and season lightly with salt and pepper.
  2. In a mixing bowl, combine soy sauce, sesame oil, garlic, ginger, and brown sugar. Add the chicken and marinate for 10 minutes.
  3. Rinse the jasmine rice under cold water. Boil 2 cups of water in a saucepan, add rice, reduce heat, cover, and simmer for about 15 minutes until absorbed.
  4. In a large pot or Dutch oven, heat a tablespoon of oil over medium-high heat and sauté the marinated chicken until caramelised (about 5-7 minutes).
  5. Add the chicken broth and rice vinegar; bring to a boil before reducing to a simmer.
  6. Slowly stir in the cornstarch mixture to thicken the broth. Simmer for an additional 5 minutes.
  7. Adjust seasoning if needed and serve over jasmine rice garnished with sliced green onions.
