  • 2 large boneless skinless chicken breasts
  • 1 ½ cups chicken broth
  • ¾ cup heavy cream (or half and half)
  • 3 tablespoons butter
  • 3 cloves garlic (minced)
  • 10 oz. Rotel diced tomatoes with green chilies (juice reserved)
  • ¾ cup cheddar jack cheese (shredded)
  • 12 tablespoons olive oil (or avocado oil)
  • 1 tablespoon honey
  • 2 teaspoons hot sauce
  • 2 teaspoons Cajun seasoning
  • 1 teaspoon brown sugar (light)
  • ½ teaspoon mustard powder
  • ½ teaspoon oregano
  • 1 pinch cayenne pepper
  • 1 pinch red pepper flakes
  • 2 teaspoons lime juice

Instructions

  1. Season both sides of the chicken breasts with Cajun seasoning. Heat olive oil in a skillet over medium heat and cook the chicken for 6-7 minutes on each side until cooked through. Remove from skillet.
  2. In the same skillet, melt butter and sauté minced garlic until fragrant. Stir in flour until golden brown, then gradually whisk in chicken broth and cream.
  3. Add honey, hot sauce, brown sugar, mustard powder, oregano, cayenne pepper, and red pepper flakes to the sauce mixture.
  4. Incorporate the reserved juice from Rotel tomatoes and their diced pieces into the sauce; simmer for about 5 minutes until slightly thickened.
  5. Return chicken to the skillet and top with shredded cheese; cover to melt cheese. Drizzle lime juice before serving.
