  • 8 Russet potatoes (peeled and diced)
  • 2 pounds boneless, skinless chicken breasts (cut into pieces)
  • ¼ cup buffalo sauce
  • 2 tablespoons extra virgin olive oil
  • 1 packet dry ranch seasoning mix
  • 1 cup shredded mild cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 810 slices cooked turkey bacon (crumbled)
  • Chopped green onions for serving
  • Sour cream for serving

Instructions

  1. Preheat your oven to 425°F and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine olive oil, buffalo sauce, ranch seasoning, and black pepper. Add diced potatoes and toss well.
  3. Spread the seasoned potatoes on the baking sheet and roast for about 30 minutes until golden brown.
  4. While potatoes roast, cook chicken pieces in a pan over medium heat until no longer pink (6-8 minutes).
  5. Once potatoes are done, layer cooked chicken atop them and sprinkle with cheddar and Monterey Jack cheeses.
  6. Top with crumbled turkey bacon and return to the oven for an additional 10-15 minutes until cheese is melted.
  7. Serve garnished with chopped green onions, sour cream, and more buffalo sauce if desired.
