  • ½ cup thinly sliced scallions
  • 2 cups Carolina long-grain rice
  • Salt and pepper to taste
  • ¼ cup canola oil
  • 1 cup full-fat, unsweetened canned coconut milk

Instructions

  1. In a medium saucepan, combine coconut milk, 2 teaspoons of salt, 1/4 teaspoon of pepper, and 1 cup of water. Bring to a boil.
  2. Stir in the rice, return to boil, then reduce heat to medium-low. Cover and cook for about 18 minutes until liquid is absorbed.
  3. Remove from heat and let sit covered for 5 minutes before fluffing with a fork. Spread on a baking sheet to cool for about 30 minutes.
  4. Mix cooled rice with chopped scallions in a large bowl.
  5. Heat oil in a skillet over high heat until shimmering. Add the rice mixture, pressing down firmly in an even layer.
  6. Cook undisturbed until golden brown on the bottom (about 5 minutes). Flip carefully and repeat on the other side until crispy.
  7. Serve warm, garnished with additional scallions if desired.
