  • 8 tablespoons unsalted butter, cut into cubes and chilled
  • ¼ cup lemon zest + ½ cup juice (from 4 lemons)
  • 1 large egg + 5 large yolks
  • ⅓ cup honey

  • 4 tablespoons unsalted butter, cut into 4 pieces and chilled
  • 2 tablespoons heavy cream
  • 10 ounces (2 cups) blueberries
  • 2 tablespoons cornstarch
  • ¼ cup honey

Instructions

  1. Prepare the crust by mixing flour, confectioners' sugar, and salt. Blend in chilled butter until crumbly. Add egg yolk, cream, and vanilla; mix until combined. Press into tart pan and chill.
  2. Bake the crust at 350°F (175°C) for 20-25 minutes until golden brown. Let cool.
  3. For the lemon curd filling, whisk together lemon juice, zest, honey, eggs in a saucepan over medium heat until thickened. Stir in butter until melted.
  4. Pour lemon curd into cooled crust.
  5. For the blueberry filling, cook blueberries with honey until bubbling. Mix cornstarch with water; add to blueberries and stir until thickened.
  6. Pour blueberry mixture over lemon curd layer and refrigerate for at least 4 hours before serving.
