  • 1 ½ cups graham cracker crumbs
  • ¼ cup granulated sugar
  • 6 tablespoons unsalted butter, melted
  • 16 ounces full-fat cream cheese, softened
  • ¾ cup granulated sugar (filling)
  • 2 large eggs
  • ¼ cup sour cream
  • 1 teaspoon pure vanilla extract
  • Zest and juice of 2 lemons
  • 1 ½ cups fresh or frozen blueberries

Instructions

  1. Preheat the oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Press firmly into the bottom of a greased 9×9 inch baking pan.
  2. In another bowl, beat together softened cream cheese and sugar until smooth. Add eggs one at a time, mixing on low speed after each addition. Stir in sour cream, vanilla extract, lemon zest, and lemon juice.
  3. Pour the cream cheese mixture over the crust and bake for about 40-45 minutes until set but slightly jiggly in the center.
  4. Turn off the oven and let cool gradually inside for an hour before transferring to a wire rack to cool completely at room temperature for another 1-2 hours.
  5. Chill in the refrigerator for at least four hours or overnight before adding blueberry topping.
