  • 2 cups fresh or frozen blueberries
  • 1 cup (2 sticks) unsalted butter, softened
  • 8 oz cream cheese, softened
  • 1 1/2 cups granulated sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. Prepare the blueberries by rinsing fresh ones or tossing frozen ones in flour to prevent sinking.
  3. In a large bowl, cream together softened butter, cream cheese, and granulated sugar until light and fluffy. Beat in eggs one at a time, followed by vanilla extract.
