  • 1 lb mafaldine noodles (or fettuccini/linguini)
  • 3 chicken breasts
  • 4 tablespoons olive oil
  • 6 tablespoons butter
  • 68 cloves garlic, minced
  • 2 cups heavy whipping cream
  • 1.5 cups shredded parmesan cheese
  • 2 tablespoons smoked paprika
  • 1 tablespoon cayenne pepper
  • 1 tablespoon onion powder
  • 2 teaspoons garlic powder
  • 1 teaspoon ground black pepper
  • 1 teaspoon salt
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano

Instructions

  1. Pound chicken to an even thickness and rub with olive oil and blackened seasoning.
  2. Heat skillet over medium-high heat; cook chicken until dark amber on one side (3-4 minutes), then flip and add butter and garlic.
  3. Cook until chicken reaches 165°F; remove from skillet and let rest before slicing.
  4. In the same skillet, melt remaining butter and sauté garlic. Add cream and blackened seasoning; simmer until thickened.
  5. Cook noodles according to package directions; reserve some pasta water.
  6. Stir parmesan into the sauce; add reserved pasta water if needed. Combine with noodles and top with sliced chicken.
