  • 1/4 cup granulated white sugar
  • 1/4 cup water
  • 2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 6 tablespoons salted butter (melted)
  • 2 packages cream cheese
  • 1/2 cup granulated white sugar
  • 1/4 teaspoon salt
  • 1 tablespoon lemon zest
  • 1/2 cup sour cream
  • 2 large eggs
  • 1/4 cup lemon juice
  • Fresh blackberries for garnish
  • Fresh lemons for garnish

Instructions

  1. Preheat your oven to 350°F (175°C). Allow cream cheese, sour cream, and eggs to reach room temperature.
  2. Prepare blackberry puree by cooking blackberries with sugar and water until thickened.
  3. For the crust, pulse graham cracker crumbs with sugar and melted butter until combined, then press into an 8×8 inch baking pan and bake for 9 minutes.
  4. Beat together cream cheese, sugar, salt, lemon zest, sour cream, eggs, and lemon juice until smooth.
  5. Pour cream cheese mixture over cooled crust, swirl in blackberry puree gently.
  6. Bake at 325°F for 55-60 minutes until slightly jiggly in the center. Cool at room temperature before refrigerating for at least three hours.
