  • 4 pounds beef chuck roast
  • 10 guajillo chiles
  • 5 ancho chiles
  • 3 arbol chiles
  • 2 Roma tomatoes
  • 1 white onion
  • 6 garlic cloves
  • 2 cups low-sodium beef broth
  • 2 tablespoons apple cider vinegar
  • Corn tortillas
  • Diced white onion
  • Roughly chopped cilantro
  • Oaxacan cheese

Instructions

  1. Prepare the Chiles: Remove stems and seeds from guajillo, ancho, and arbol chiles. Toast lightly in a skillet for 2–3 minutes.
  2. Blend the Sauce: Combine toasted chiles, tomatoes, onion, garlic cloves, broth, vinegar, salt, pepper, cumin, oregano, cloves, cinnamon, ginger, and bay leaves in a blender. Blend until smooth.
  3. Cook the Beef: Place beef chuck roast in a large pot or Dutch oven and pour blended sauce over it. Cover and simmer on low heat for about 8 hours until tender.
  4. Shred the Beef: Remove beef from pot and shred using two forks; return to pot with some broth.
  5. Assemble Tacos: Heat corn tortillas in a skillet; fill each with shredded beef and Oaxacan cheese.
  6. Serve with Consommé: Ladle remaining broth into small bowls for dipping alongside tacos.
