  • 2 cans kidney beans (drained and rinsed)
  • 2 small green peppers (diced)
  • 1 small yellow onion (diced)
  • 2 cans diced tomatoes
  • 15-ounce can tomato sauce
  • 6-ounce can tomato paste
  • 3 tablespoons chili powder
  • 2 tablespoons garlic powder
  • 2 tablespoons onion powder
  • 3 tablespoons cumin
  • 1 tablespoon paprika
  • 1 teaspoon chipotle powder
  • ½ teaspoon cayenne pepper
  • ½ tablespoon salt
  • 1 teaspoon white pepper
  • ½ teaspoon baking soda (optional)

Instructions

  1. In a large Dutch oven over medium heat, sauté diced green peppers and onions until they are translucent.
  2. Add spices (chili powder, garlic powder, onion powder, cumin, paprika, chipotle powder, cayenne pepper, salt, white pepper) and cook for 1-2 minutes.
  3. Incorporate ground beef or turkey into the pot and cook until browned.
  4. Pour in tomato sauce, diced tomatoes, water, and tomato paste; stir to combine.
  5. Bring to a gentle simmer over medium-low heat for about 15 minutes. Add drained kidney beans.
  6. If desired, stir in baking soda to enhance flavors while bubbling.
  7. Remove from heat and allow to sit briefly before serving.
