  • 1 kg beetroot
  • 2 oranges
  • 500 ml apple cider vinegar
  • 400 g brown sugar
  • 3 onions (finely chopped)
  • 3 apples (peeled and chopped)
  • 2 garlic cloves (crushed)
  • 1 tbsp salt
  • 4 cloves
  • 1 bay leaf
  • 1 cinnamon stick
  • 1 tsp grated fresh ginger
  • 2 chillis (chopped)

Instructions

  1. Begin by peeling and chopping the beetroot into small cubes.
  2. Grate the zest off the oranges and slice them into segments, reserving any juice.
  3. In a large pot over low heat, combine all ingredients to dissolve the sugar.
  4. Once dissolved, raise the heat to boil, then reduce to simmer for about one hour until all fruits are soft.
  5. Use a potato masher to achieve your desired consistency.
  6. Remove bay leaf and cinnamon stick before spooning the hot chutney into sterilized jars and sealing tightly.
