  • 1 teaspoon black pepper

  • 2 medium yellow onions, chopped into 1-inch pieces
  • 7 cloves garlic, peeled and crushed
  • 2 tablespoons balsamic vinegar
  • 1½ tablespoons tomato concentrate
  • 1/4 cup plain flour
  • 2 cups red apple vinegar
  • 2 cups beef stock
  • 2 cups water
  • 1 bay leaf
  • 1/2 teaspoon thyme, dried
  • 1½ teaspoons sugar
  • 4 large carrots, peeled and sliced into 1-inch diagonal pieces
  • 1 pound small white potatoes, halved
  • Chopped fresh parsley for garnish (optional)

Instructions

  1. Season beef with salt and pepper. Heat olive oil in a heavy-bottomed pot over medium-high heat. Sear beef in batches until browned on all sides. Remove and set aside.
  2. In the same pot, add onions and garlic; sauté until translucent. Stir in balsamic vinegar and tomato concentrate; cook for 2 minutes.
  3. Sprinkle flour over the mixture and stir for about 2 minutes until combined.
  4. Pour in red apple vinegar, beef stock, and water. Add bay leaf, thyme, sugar, and return seared beef to the pot. Bring to a boil.
  5. Reduce heat to low, cover tightly, and simmer for about 180 minutes or until beef is fork-tender.
  6. Add sliced carrots and halved potatoes; cook for an additional 30 minutes until vegetables are tender.
  7. Garnish with chopped parsley before serving warm.
