  • 3 Russet potatoes

  • 1/4 cup diced red bell pepper
  • 3 garlic cloves, minced
  • 2 Roma tomatoes, chopped
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • 2 cups precooked cornmeal (Harina PAN)
  • 2 cups water
  • 1 teaspoon salt
  • 1 teaspoon chicken bouillon
  • 1 tablespoon cornstarch
  • 1 tablespoon vegetable oil (e.g., avocado oil)
  • 1/2 cup scallions, finely chopped
  • 1/3 cup cilantro, finely chopped
  • 1/4 cup diced Roma tomato
  • 1/4 cup hot sauce (or to taste)
  • 1/2 cup water
  • 1/4 cup white vinegar

Instructions

  1. Prepare the filling by boiling the potatoes until tender, mashing them afterward. Sauté red onion, garlic, and red bell pepper in a frying pan until soft. Add chopped steak and cook until browned. Mix in spices, mashed potatoes, and tomatoes.
  2. Create the dough by combining cornmeal with water, salt, chicken bouillon, cornstarch, and oil in a mixing bowl. Knead until smooth.
  3. Assemble empanadas by flattening dough into circles, filling with beef mixture, folding over and sealing edges.
  4. Heat oil in a frying pan and fry each empanada until golden brown on both sides.
