  • 1 lb dried pinto beans
  • 4 cups chicken stock
  • 1 bottle beef broth (preferably Mexican)
  • 1 medium onion (chopped)
  • 2 jalapeño peppers (seeded and finely chopped)
  • 3 cloves garlic (minced)
  • ½ cup cilantro (fresh, chopped)
  • 2 tomatoes (roughly chopped)
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • 1 tsp salt (to taste)
  • 1 tsp black pepper
  • 2 cups water (plus more as the beans simmer)
  • 1 pound chicken bone (optional)

Instructions

  1. Soak the dried pinto beans in water overnight.
  2. Drain the beans and place them in a large pot with chicken stock, beef broth, and water. Simmer on low heat for 1½ hours.
  3. In a skillet, cook chopped turkey bacon until crispy; set aside.
  4. Sauté chopped onion, jalapeños, and minced garlic in the remaining grease until soft.
  5. Combine sautéed vegetables and cooked turkey bacon with the simmering beans. Add cilantro, tomatoes, cumin, oregano, salt, and pepper; continue simmering for another 1½ hours until tender.
