Ingredients

Scale
  • 2 cups long-grain rice
  • 4 cups chicken broth
  • 1 can (15 oz) pigeon peas, drained
  • 1 small onion, chopped
  • 1 red bell pepper, diced
  • 2 cloves garlic, minced
  • 1 teaspoon oregano
  • 1 teaspoon cumin
  • Salt to taste
  • 3 tablespoons olive oil
  • 2 bay leaves
  • 1/4 cup green olives, sliced (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté chopped onion and diced bell pepper until softened (about 5 minutes). Add minced garlic and cook for another minute.
  2. Stir in oregano, cumin, salt, and bay leaves. Mix well before adding the rice; stir until each grain is coated with oil.
  3. Gradually add chicken broth while gently stirring. Incorporate drained pigeon peas into the mixture.
  4. Bring to a boil over high heat. Once boiling, reduce heat to low and cover tightly. Simmer for about 20-25 minutes or until rice is tender.
  5. After cooking time is complete, let sit covered for an additional 5 minutes before fluffing rice gently with a fork.
