  • 1/2 cup (113g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 1/4 cup (50g) brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 1/2 cups (180g) all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1 medium apple, peeled and finely diced
  • 2 tbsp (25g) granulated sugar for topping
  • 1 tsp ground cinnamon for topping

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. In a mixing bowl, cream together softened unsalted butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in one egg and one teaspoon of vanilla extract until well combined.
  4. In another bowl, whisk together flour, baking powder, salt, cinnamon, and nutmeg.
  5. Gradually add the dry mixture to the wet ingredients and mix until just combined.
  6. Fold in one medium peeled and finely diced apple gently.
  7. Spread the batter evenly into the prepared baking pan.
  8. Mix two tablespoons of sugar with one teaspoon of cinnamon for the topping; sprinkle over the batter.
  9. Bake for 25–30 minutes until edges are golden brown and a toothpick inserted comes out clean.
  10. Allow to cool completely before cutting into bars.
