  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup butter (room temperature)
  • 3/4 cup granulated sugar
  • 2 large eggs (room temperature)
  • 3/4 cup buttermilk
  • 2 teaspoons vanilla extract
  • 2 medium apples (peeled and chopped)
  • 1/3 cup brown sugar

Instructions

  1. Preheat your oven to 350°F (180°C) and prepare a 9 x 4-inch baking tin with parchment paper.
  2. In a bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon; set aside.
  3. In a large bowl, cream butter and sugar until fluffy. Add eggs one at a time and stir in vanilla.
  4. Gradually mix in half of the dry ingredients followed by buttermilk; then fold in remaining flour mixture.
  5. Prepare apple filling by tossing chopped apples with brown sugar and cinnamon.
  6. Layer half the batter in the tin, add half the apple mixture, swirl gently, then top with remaining batter and apples.
  7. Bake for 55-65 minutes until golden; cover with foil if browning too quickly.
  8. Cool in the pan for about ten minutes before transferring to a rack.
