  • 1/3 cup low sodium soy sauce
  • 1/3 cup pineapple juice
  • 2 tablespoons brown sugar
  • 2 tablespoons ketchup
  • 4 cloves garlic, chopped
  • 1 tablespoon grated ginger
  • 2 cups fresh pineapple chunks
  • 1 can (14 ounces) coconut milk
  • 1 cup basmati rice
  • 1/2 small shallot, finely chopped
  • 1 jalapeno, seeded if desired and chopped
  • Juice of 1 lime
  • 2 tablespoons fresh thyme leaves
  • 1 avocado, diced
  • 1/2 cup water
  • 1 pinch salt

Instructions

  1. In a bowl, mix soy sauce, pineapple juice, brown sugar, ketchup, garlic, ginger, and red pepper flakes. Add chicken pieces and marinate for at least 15 minutes.
  2. In a skillet over medium heat, sauté shallot and jalapeno in sesame oil until softened. Add rice and toast for about 2 minutes.
  3. Pour in coconut milk and water; season with salt. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes.
  4. In another skillet over medium-high heat, cook marinated chicken until done (about 7–10 minutes).
  5. Serve coconut rice topped with chicken, pineapple chunks, lime juice, avocado, and cilantro.
