  • 1 tablespoon honey or maple syrup (optional)

Instructions

  2. Once cool, peel and slice the beets into bite-sized pieces.
  3. Thinly slice the cucumber using a mandoline or sharp knife for an added crunch.
  4. In a small bowl, whisk olive oil, red apple vinegar or lemon juice, and optional honey or maple syrup. Season with salt and pepper.
  5. In a large bowl, combine sliced beets, cucumber, and fresh dill. Drizzle dressing over the top and toss gently to coat.
