  • 480ml dairy-free milk (such as soya)
  • 2 teaspoons apple cider vinegar
  • 420g self-raising flour
  • 300g caster sugar
  • 1 teaspoon baking powder
  • 1 teaspoon bicarbonate of soda
  • 120ml sunflower oil
  • 1 teaspoon vanilla extract
  • 80g mango puree
  • For frosting: 300g dairy-free butter, 500g powdered sugar, 6 tablespoons mango puree
  • For decoration: 400g desiccated coconut, fresh mango cubes

Instructions

  1. Preheat oven to 180°C (350°F). Grease two 8-inch baking pans or line with parchment paper.
  2. In a bowl, mix dairy-free milk and apple cider vinegar; let sit for 5 minutes to thicken.
  3. In a large bowl, whisk together self-raising flour, caster sugar, baking powder, and bicarbonate of soda.
  4. In another bowl, combine the thickened milk mixture with sunflower oil, vanilla extract, and mango puree.
  5. Pour wet ingredients into dry ingredients; stir until just combined.
  6. Divide batter between prepared pans and bake for 25–30 minutes or until a toothpick inserted comes out clean.
  7. Let cakes cool in pans for 10 minutes before transferring to a cooling rack.
  8. For frosting, beat dairy-free butter until creamy; gradually add powdered sugar and mix in mango puree until smooth.
  9. Once cooled, frost the top of one cake layer, place the second layer on top, and frost the sides and top as desired.
  10. Coat with desiccated coconut and decorate with fresh mango cubes.
