3 cups butternut squash, peeled, seeded, cubed
340 g Brussels sprouts, trimmed and halved
225 g bow tie pasta
340 g cooked chicken Turkey sausage
5 cloves garlic, minced
1 tablespoon olive oil (for butternut squash)
2 tablespoons olive oil (for Brussels sprouts)
1 tablespoon olive oil (for pasta dish)
2 tablespoons butter
Salt and pepper to taste
¼ teaspoon smoked paprika
Fresh thyme leaves
Instructions
Preheat your oven to 200°C (400°F).
Toss cubed butternut squash with olive oil, salt, and pepper; spread on a baking sheet.
Roast for 15-20 minutes until tender.
Toss Brussels sprouts with olive oil, salt, and pepper; roast for 20-30 minutes until crispy.
Boil salted water in a pot; cook bow tie pasta until al dente. Drain while reserving some pasta water.
In a skillet over medium heat, brown sliced chicken sausage in olive oil; remove and set aside.
In the same skillet, sauté minced garlic in butter until fragrant; add cooked pasta and season.
Combine roasted vegetables and Turkey sausage with the pasta; mix gently and adjust seasoning.
