  • 3 cups butternut squash, peeled, seeded, cubed
  • 340 g Brussels sprouts, trimmed and halved
  • 225 g bow tie pasta
  • 340 g cooked chicken Turkey sausage
  • 5 cloves garlic, minced
  • 1 tablespoon olive oil (for butternut squash)
  • 2 tablespoons olive oil (for Brussels sprouts)
  • 1 tablespoon olive oil (for pasta dish)
  • 2 tablespoons butter
  • Salt and pepper to taste
  • ¼ teaspoon smoked paprika
  • Fresh thyme leaves

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. Toss cubed butternut squash with olive oil, salt, and pepper; spread on a baking sheet.
  3. Roast for 15-20 minutes until tender.
  4. Toss Brussels sprouts with olive oil, salt, and pepper; roast for 20-30 minutes until crispy.
  5. Boil salted water in a pot; cook bow tie pasta until al dente. Drain while reserving some pasta water.
  6. In a skillet over medium heat, brown sliced chicken sausage in olive oil; remove and set aside.
  7. In the same skillet, sauté minced garlic in butter until fragrant; add cooked pasta and season.
  8. Combine roasted vegetables and Turkey sausage with the pasta; mix gently and adjust seasoning.
