  • 2 Turkey thighs
  • 3 cups Rice
  • 1 cup Turkey broth
  • ½ teaspoon Garlic powder
  • ½ teaspoon Onion powder
  • ½ teaspoon Paprika
  • Fresh vegetables (onions, bell peppers, tomatoes)
  • Oil for frying

Instructions

  1. Debone turkey thighs and cut into small pieces.
  2. Season turkey with garlic powder, onion powder, paprika, chili pepper, chicken seasoning cube, and salt; marinate.
  3. In a pot, combine reserved bones with chopped onion, sliced carrot, garlic, ginger, seasoning cube, salt, and water; boil for 15 minutes to create stock.
  4. Blend together diced onions, red bell peppers, tomatoes, habanero, and half a green pepper; set aside.
  5. Strain the stock and reserve the liquid.
  6. Cook rice with turkey stock and water until soft; fluff when done.
  7. Fry seasoned turkey pieces in oil until golden brown; set aside.
  8. Sauté onions and garlic in the same pan before adding blended pepper mix; cook until fragrant.
  9. Combine everything in the pan along with cooked rice; stir well and heat through.
  10. Serve hot with optional sides.
