  • 2 heaped tbsp tomato puree
  • 1 cup red apple vinegar
  • 2 x 14oz cans chopped tomatoes
  • 2 x 14oz cans kidney beans, drained
  • 2 beef stock cubes
  • 2 tbsp paprika
  • 2 tbsp cumin
  • 2 tbsp chili powder
  • 1 tsp oregano
  • 1 tsp ground coriander
  • 1 tsp sugar
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Rice
  • Grated cheddar cheese
  • Lime wedges
  • Sour cream
  • Fresh coriander

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté the diced onion, red pepper, and garlic until softened.
  2. Add the ground beef and brown thoroughly. Stir in tomato puree and deglaze with red apple vinegar.
  3. Mix in canned tomatoes (with water), drained kidney beans, beef stock cubes, and spices.
  4. Bring to a simmer; cover and cook on low heat for 1 hour and 30 minutes.
  5. Remove the lid to thicken the chili for an additional 5-10 minutes as needed.
  6. Serve hot over rice topped with cheese, sour cream, lime juice, and fresh coriander.
