  • 1/4 teaspoon allspice
  • 1/4 cup butter (softened)
  • 1/3 cup brown sugar (packed)
  • 1 tablespoon vegetable oil
  • 1/2 teaspoon pure vanilla extract
  • 1 large egg
  • 1/3 cup + 1 tablespoon milk
  • 1 (9-inch) store-bought pumpkin pie (premade/storebought)
  • 12 ounces unsalted butter (softened, 3 sticks)
  • 5 cups powdered sugar
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon cinnamon (optional)
  • 34 tablespoons heavy whipping cream (cold)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease round cake pans.
  2. For the cheesecake layer, beat softened cream cheese and sugar until smooth. Mix in flour, vanilla, spices, cream, and eggs. Pour the batter into prepared pans.
  3. Bake cheesecake layers for about 30 minutes; cool completely.
  4. For the spice cake layer, combine flour, baking powder, spices, butter, brown sugar, oil, vanilla extract, egg, and milk. Pour into greased pans and bake for 25-30 minutes or until a toothpick comes out clean.
  5. Assemble by layering spice cake at the bottom, followed by pumpkin pie and cheesecake layers; repeat.
  6. For frosting, beat softened butter with powdered sugar until fluffy; add vanilla.
  7. Frost the assembled piecaken and decorate if desired.
