  • 6 bell peppers
  • 1 lb lean ground beef
  • 2 cups cooked brown rice
  • 14.5 oz can diced tomatoes
  • 18 oz can black beans, drained & rinsed
  • 15 oz can corn, drained & rinsed
  • 1 packet taco seasoning
  • 1 1/2 cup shredded cheddar jack cheese
  • 1 onion, diced
  • 2 tsp garlic powder
  • 1 tsp chili powder
  • Salt
  • Black pepper

Instructions

  1. Preheat the oven to 350°F (175°C). Cut the bell peppers in half and remove seeds.
  2. Place peppers in a baking dish, drizzle with olive oil, and bake for 5 minutes.
  3. In a large skillet, sauté diced onion with olive oil, garlic powder, chili powder, salt, and pepper until soft.
  4. Add ground beef to the skillet and cook until browned.
  5. Stir in diced tomatoes, black beans, corn, brown rice, and taco seasoning; season to taste.
  6. Fill each pepper generously with the mixture and cover the dish with foil.
  7. Bake covered for 10 minutes; then remove foil and top with cheese. Bake uncovered for an additional 15 minutes until melted.
