Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9.25 x 5.25 inch loaf pan.
  2. In a large mixing bowl, cream the softened butter and sugar until light and fluffy.
  3. Add the eggs one by one, mixing well after each addition, then incorporate the vanilla extract and mashed sweet potatoes.
  4. In another bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg.
  5. Gradually add the dry mixture to the wet ingredients and mix until just combined. Pour into the prepared loaf pan.
  6. In a small bowl, combine the topping sugar and cinnamon; sprinkle it over the batter.
  7. Bake for 55–65 minutes or until a toothpick inserted into the center comes out clean. Allow to cool in the pan for 15 minutes before transferring to a cooling rack.
