2 eggs
2 slices halloumi cheese
1/2 avocado, sliced
1 cup fresh spinach
1/2 cup mushrooms, sliced
1 tomato, halved
1 tbsp olive oil
Salt, pepper, and chili flakes to taste
Fresh parsley for garnish (optional)
Instructions
Heat oil in a non-stick pan over medium heat. Fry the eggs sunny-side up until whites are set and yolks remain runny; season with salt and chili flakes.
In another pan, sauté mushrooms in olive oil for about 5-7 minutes until golden brown; season with salt and pepper.
Add spinach to the mushroom pan and sauté for an additional 1-2 minutes until wilted.
Grill tomato halves and halloumi slices in a hot grill pan for about 3-4 minutes per side until charred.
Arrange all components on a plate; garnish with fresh parsley if desired.
