  • 1 ½ lbs skirt steak
  • 1 lb purple cabbage
  • 1 large red pepper
  • 1 large poblano pepper
  • 1 red onion
  • olive oil
  • kosher salt
  • 12 tortillas
  • 6 oz crumbled queso fresco
  • ½ cup freshly squeezed orange juice
  • 2 tsp orange zest
  • 1 (7oz) can chipotle peppers in adobo sauce
  • 2 tbsp honey
  • ¾ cup neutral oil

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Roast halved peppers and onion on a sheet pan drizzled with olive oil for 35–40 minutes until tender. Roast sliced cabbage on a separate sheet for about 25–30 minutes.
  3. Let the skirt steak rest at room temperature for 30 minutes before cooking.
  4. Prepare chipotle sauce in a food processor by blending orange juice, zest, chipotle peppers, honey, and oil until smooth.
  5. Mix roasted vegetables with green onions and half of the chipotle sauce in a bowl.
  6. Sear the steak in a hot cast iron skillet for about 3–5 minutes per side until desired doneness; let it rest before slicing.
  7. Assemble tacos with roasted cabbage slaw, steak slices, drizzle with chipotle sauce, and sprinkle cheese before serving.
