  • 1.5 lbs beef chuck, cut into cubes
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 2 tablespoons Madras curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cayenne pepper (adjust to taste)
  • 1 tablespoon tomato paste
  • 1 can diced tomatoes (14 oz)
  • 1/2 cup beef stock
  • Salt and black pepper to taste
  • 1 tablespoon lemon juice

Instructions

  1. Heat vegetable oil in a heavy-bottomed pot over medium heat.
  2. Sauté finely chopped onions until translucent. Add minced garlic and grated ginger; cook until fragrant.
  3. Stir in Madras curry powder, cumin, coriander, turmeric, and cayenne pepper; toast for about 2 minutes.
  4. Increase heat to medium-high; add beef cubes and brown on all sides for about 5–7 minutes.
  5. Mix in tomato paste and diced tomatoes; pour in beef stock while scraping the pot's bottom.
  6. Bring to a boil, then reduce heat to low; cover and simmer for about 1.5 hours until beef is tender.
  7. Season with salt, black pepper, and lemon juice; serve hot over rice or with naan.
