  • 4 cups chicken broth
  • 2 cups whole milk or heavy cream
  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 45 jalapeños, chopped (seeds removed for milder heat)
  • 1/2 cup cooked, diced chicken or preferred protein
  • Salt and pepper to taste
  • 4 slices of bread (white, whole wheat, or sourdough)
  • 1 1/2 cups shredded cheddar cheese

Instructions

  1. In a large pot over medium heat, melt the butter. Add the diced onion and minced garlic; sauté for about 3-4 minutes until soft.
  2. Pour in the chicken broth and milk (or cream); stir well and bring to a simmer for 5-7 minutes.
  3. Gradually add the shredded cheddar and Monterey Jack cheeses, stirring constantly until melted.
  4. Mix in the chopped jalapeños and cooked chicken; season with salt and pepper. Adjust heat level as desired.
  5. For grilled cheese dippers, butter one side of each bread slice. In a skillet over medium heat, place two slices (buttered side down), top with cheese, and cover with another slice (buttered side up). Cook until golden brown on both sides.
  6. Ladle soup into bowls, garnish as desired, and serve alongside grilled cheese dippers.
