  • 12 hard-boiled eggs
  • 2 tbsp mayonnaise
  • 1 1/2 tbsp dill pickle relish
  • 2 tsp yellow mustard
  • 11 1/2 tsp Cajun seasoning
  • 23 dashes hot sauce
  • 1 1/2 cups flour
  • 2 large eggs (beaten)
  • 2 cups Panko breadcrumbs

Instructions

  1. Prepare the filling by scooping out yolks from halved hard-boiled eggs into a mixing bowl. Add mayonnaise, dill pickle relish, yellow mustard, Cajun seasoning, and hot sauce. Blend until smooth.
  2. Fill each egg white half with the yolk mixture using a spoon or piping bag.
  3. Preheat the oven to 375°F (190°C). Set up a breading station with flour in one bowl, beaten eggs in another, and Panko breadcrumbs mixed with gumbo file powder in a third bowl. Dip filled egg halves in flour, then beaten eggs, followed by Panko breadcrumbs.
  4. Bake on a parchment-lined baking sheet for about 15-20 minutes until golden brown and crispy.
