  • 1 teaspoon pumpkin pie spice (or cinnamon)
  • 1/3 cup brown sugar (for frosting)
  • 3 1/4 cups powdered sugar

Instructions

  1. Cream together softened vegan butter, pumpkin puree, brown sugar, granulated sugar, and vanilla until fluffy.
  2. In a separate bowl, whisk all-purpose flour, baking powder, pumpkin pie spice, cornstarch, and salt.
  3. Gradually combine dry ingredients with wet ingredients until just mixed.
  4. Chill the dough in the refrigerator for at least 30 minutes.
  5. Preheat oven to 350 °F (177 °C).
  6. Scoop dough into 2-inch balls, flatten slightly, and place on parchment-lined baking sheets.
  7. Bake for 10-12 minutes and allow to cool completely.
  8. For frosting, whip together softened vegan butter, vanilla paste or extract, cinnamon, pumpkin pie spice, brown sugar, and powdered sugar until smooth.
