  • 1 and 1/3 cup granulated sugar
  • 1/3 cup brown sugar (packed)
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 3 and 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 3/4 teaspoon kosher salt
  • 1 and 1/2 teaspoons cream of tartar
  • 1/3 cup granulated sugar (for rolling)
  • 1 and 1/2 tablespoons cinnamon

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit and line baking sheets with parchment paper.
  2. In a large bowl or stand mixer, beat the softened butter until smooth. Add granulated and brown sugars, beating until light and fluffy.
  3. Mix in eggs and vanilla extract until well combined.
  4. In another bowl, whisk together flour, baking soda, kosher salt, and cream of tartar. Gradually add this dry mixture to the wet ingredients until just combined.
  5. Using a cookie scoop or spoon, form dough balls about 1½ to 2 inches in diameter. Roll each ball in the cinnamon-sugar mixture until well coated.
  6. Place cookie dough balls on prepared baking sheets with space in between and bake for about 9–11 minutes until edges are set but centers are still shiny.
  7. Let cookies cool on the pan for about three to five minutes before transferring them to a wire rack.
